Pimento Cheese Preparation

In a medium mixing bowl, combine goat cheese, aged gouda, and cream cheese. Use a fork to mash and blend the cheeses until smooth.

Add pimentos, garlic powder, onion powder, cayenne pepper, salt, and black pepper to the cheese mixture. Stir until all ingredients are well combined.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.
Bacon & Onion Jam Preparation

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and drain on paper towels, leaving the bacon fat in the skillet.

Add brown sugar, apple cider vinegar, fresh thyme, salt, and black pepper to the skillet. Stir well and bring the mixture to a simmer.

Chop the cooked bacon and add it back to the skillet. Cook for an additional 10 minutes, stirring occasionally, until the jam thickens.

Remove from heat and let the jam cool slightly before using.
Assembly

Spread a generous amount of the pimento cheese mixture on each slice of sourdough bread.

Top half of the slices with the bacon and onion jam.
