Mix Cheese Base
In a mixing bowl, combine the cream cheese, aged gouda cheese, and mayonnaise. Mix until smooth and well blended.

Add Flavorings
Add the pimentos, garlic powder, onion powder, salt, and black pepper to the cheese mixture. Stir until all ingredients are fully incorporated.

Taste and Adjust
Taste the mixture and adjust seasoning with more salt or pepper if needed. Set aside in the refrigerator until ready to use.

Make Bacon Jam
Chop the cooked bacon and return it to the skillet with the onions. Stir in the brown sugar, apple cider vinegar, and black pepper. Cook for an additional 10 minutes, stirring occasionally, until the mixture is thickened and jam-like.

Cool and Store
Remove from heat and let cool before using. Store in an airtight container in the refrigerator.

Toast Bread
Toast the sourdough bread slices until golden brown.

Spread Pimento Cheese
Spread a generous amount of pimento cheese spread on one side of four slices of toasted bread.

Add Greens and Tomato
Top with a layer of arugula and slices of fresh tomato. Season with salt and black pepper to taste.

Spread a layer of bacon jam on the other side of the remaining four slices of toasted bread.

Place the bacon jam side down on top of the assembled sandwiches to create a complete sandwich.
