    Caramelize the Onions

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and sprinkle with salt and sugar. Stir to combine.

    Cook the onions for about 30-40 minutes, stirring frequently, until they are golden brown and caramelized. If the onions begin to stick to the pan, add a splash of water to deglaze.

    Once caramelized, stir in the fresh thyme and remove from heat. Set aside.

    Prepare the Grilled Cheese

    In a separate skillet, heat 1 tablespoon of olive oil over medium heat.

    Butter one side of each slice of bread with the remaining 2 tablespoons of butter. Place the slices, butter-side down, in the skillet.

    On each slice of bread, layer a mix of Gruyère and cheddar cheese.

    Add a generous portion of the caramelized onions on top of the cheese, then finish with another layer of cheese. Top with another slice of bread, butter-side up.

    Grill the Sandwiches

    Cook the sandwiches for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Repeat with the remaining ingredients to make additional sandwiches.

    Cut the grilled cheese sandwiches in half and serve hot, garnished with extra thyme and black pepper if desired.
