    Prepare the Bread

    Preheat your oven to 350°F (175°C). Tear the artisanal bread into bite-sized pieces and place them in a large mixing bowl.

    Mix the Custard

    In another bowl, whisk together milk, eggs, sugar, cinnamon, and vanilla extract until well combined.

    Combine Ingredients

    Pour the custard mixture over the bread pieces, ensuring they are well soaked. Gently fold in the diced quince.

    Bake

    Transfer the mixture to a greased baking dish and bake for 45-50 minutes or until the top is golden brown and a knife inserted in the center comes out clean.

    Prepare Cider Caramel

    While the bread pudding is baking, prepare the cider caramel by simmering 1 cup of apple cider with 1 cup of sugar until it reduces and thickens. Let cool slightly.

    For the meringue, whip 4 egg whites with 1/4 cup of sugar until stiff peaks form. Spread over the baked bread pudding and broil for 2-3 minutes until lightly browned.
