Marinate Chicken
In a large bowl, combine the chicken thighs and buttermilk. Make sure the chicken is fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare Coating
In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Fry Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the buttermilk and dredge each piece in the flour mixture, shaking off excess. Fry the chicken in the hot oil for 6-8 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.

Prepare Biscuit Dough
Preheat your oven to 425°F (220°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Make a well in the center and pour in the milk. Stir until just combined, being careful not to overmix.

Turn the dough out onto a floured surface and gently pat into a 1-inch thick round. Cut out biscuits using a biscuit cutter or a glass. Place on a baking sheet and bake for 12-15 minutes, or until golden brown.

In a skillet over medium heat, crumble and cook the breakfast sausage until browned and cooked through, about 5-7 minutes.

Sprinkle the flour over the sausage and stir to combine. Cook for 1-2 minutes, then gradually whisk in the milk. Continue cooking, stirring frequently, until the gravy thickens. Season with black pepper and salt to taste.
