Beignets Preparation
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, granulated sugar, instant yeast, and salt. Whisk together until well mixed.
Warm Wet Ingredients
In a small saucepan, warm the milk and butter over low heat until the butter is melted. Allow it to cool slightly before adding the eggs, whisking to combine.
Combine Ingredients
Make a well in the center of the dry ingredients and pour in the milk mixture. Stir until a soft dough forms.
Shape the Beignets
Once risen, punch down the dough and roll it out to about 1/2 inch thick. Cut into squares or rectangles using a sharp knife or pastry cutter.
Frying
Heat the Oil
In a deep pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
Fry the Beignets
Carefully drop a few pieces of dough into the hot oil, frying them in batches to avoid overcrowding. Fry for 2-3 minutes on each side until golden brown.
Drain and Cool
Remove the beignets from the oil using a slotted spoon and place them on paper towels to drain excess oil.
