Preparing the Protein

    Cook the Chicken Breast

    Season the chicken breast with salt and black pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes on each side until fully cooked through and no longer pink in the center. Remove from skillet and let it rest for a few minutes before slicing.

Cooking the Egg

    Fry the Egg

    In the same skillet used for the chicken, add butter and let it melt over medium heat. Crack the egg into the skillet and cook until the whites are set and the yolk is firm, about 3-4 minutes. Carefully flip the egg and cook for an additional minute for an over-hard finish.

Preparing the Potatoes

    Roast the Red Skin Potatoes

    Preheat the oven to 400°F (200°C). Cut red skin potatoes into quarters and place them in a bowl. Drizzle with olive oil, sprinkle with garlic powder, paprika, salt, and black pepper. Toss to coat evenly. Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes or until golden brown and tender, stirring halfway through.

    Plate the Dish

    On a plate, place sliced chicken breast, topped with cheddar cheese while still warm to allow it to melt. Add the fried egg on top, and serve with a generous portion of roasted red skin potatoes on the side.
