Shrimp Preparation

Sauté Shrimp
In a large skillet, heat olive oil over medium-high heat. Add the shrimp and sprinkle with bayou spice blend. Sauté for 3-4 minutes until shrimp are pink and cooked through. Remove from heat and set aside.

Baste Eggs
In a separate skillet, bring water to a gentle simmer. Crack 2 eggs at a time into a small bowl, then gently slide them into the simmering water. Cook for about 3-4 minutes until the whites are set but the yolks remain runny. Use a slotted spoon to remove and set aside. Repeat with remaining eggs.

Sear Tomatoes and Spinach
In the same skillet used for the eggs, add the sliced tomatoes and sear for 2-3 minutes on each side until slightly charred. Add fresh spinach and sauté until wilted. Season with salt and black pepper.

Make Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks and lemon juice until thickened. Gradually drizzle in melted butter while whisking continuously until the sauce is smooth and creamy. Stir in Cajun seasoning and salt to taste.
