Biscuit Preparation

    Preheat the Oven

    Preheat your oven to 450°F (230°C).

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

    Cut in Butter

    Cut the cold unsalted butter into small pieces and mix it into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Milk

    Slowly add the milk to the mixture and stir until just combined. Do not overmix.

    Shape the Biscuits

    Turn the dough onto a floured surface and gently knead it a few times. Pat it down to about 1-inch thickness and cut out biscuits using a round cutter.

    Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.

Sausage and Egg Preparation

    In a skillet over medium heat, cook the sausage patties for about 5 minutes on each side or until fully cooked.

    In the same skillet, crack the eggs and cook them over hard until the yolks are set, about 3-4 minutes.

Comeback Sauce Preparation

    Mix Sauce Ingredients

    In a small bowl, combine mayonnaise, ketchup, hot sauce, Worcestershire sauce, garlic powder, paprika, and salt. Mix well and set aside.

Potato Preparation

    Prepare Potatoes

    Wash and cut the red skin potatoes into quarters.

    Season and Roast

    Toss the potatoes with olive oil, salt, black pepper, and fresh herbs (if using). Spread them out on a baking sheet and roast in the oven alongside the biscuits for about 20-25 minutes or until golden and tender.

Assembly

    Assemble the Razorback

    To assemble, split the baked biscuit in half. Layer one half with a sausage patty, a slice of pepperjack cheese, a slice of tomato, a generous dollop of comeback sauce, smashed avocado, and a fried egg. Top with the other half of the biscuit.

    Serve the Razorback with a side of roasted red skin potatoes.
