Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

Cut in Butter
Add the unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Milk
Pour in the milk gradually, mixing until the dough comes together. Be careful not to overmix; the dough should be slightly sticky.

Chill the Dough
Cover the dough with plastic wrap and refrigerate for about 30 minutes to make it easier to handle.
Assembling Pigs in a Biscuit

Preheat Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roll Out Dough
On a floured surface, roll out the chilled biscuit dough to about 1/4-inch thickness.

Cut Dough into Squares
Cut the rolled-out dough into squares large enough to wrap around the sausage links (about 3x3 inches).

Place a sausage link in the center of each square of dough. Fold the dough around the sausage, pinching the seams to seal.

Place the wrapped sausages seam-side down on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown.

While the pigs in a biscuit are baking, pour the spicy mustard into a small serving bowl.
