Prepare the Vegetables
In a skillet over medium heat, add a drizzle of olive oil or cooking spray. Add the chopped onion, diced bell pepper, sliced mushrooms, and chopped asparagus. Sauté for about 5 minutes, until the vegetables are tender.

Add Tomatoes and Goat Cheese
Fold in the diced tomatoes and crumbled goat cheese. Cook for an additional 1-2 minutes just until the goat cheese starts to melt. Season with salt and pepper to taste.

Preheat the Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

Cut in Butter
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Milk and Form Dough
Pour in the milk and stir until just combined. Be careful not to overmix.

Shape and Bake Biscuits
Turn the dough onto a floured surface and gently knead it a few times. Pat it into a circle about 1 inch thick. Cut into rounds using a biscuit cutter or glass. Place on a baking sheet and bake for 12-15 minutes until golden brown.
