Method

Prepare Ingredients

    Prep Vegetables and Ham

    Wash and dice the fresh potatoes into small cubes. Chop the bell pepper, onion, and mushrooms into bite-sized pieces. Dice the ham into small cubes.

Make Gravy

    Cook Sausage

    In a skillet over medium heat, cook the sausage until browned. Remove excess grease, leaving a small amount in the pan.

    Make Roux

    Stir in the flour and cook for 1-2 minutes until well combined and golden.

    Add Milk and Season

    Gradually whisk in the milk, stirring constantly until the mixture thickens. Season with salt and black pepper.

    Keep Gravy Warm

    Reduce heat to low to keep the gravy warm while you prepare the scramble.

Cook Scramble

    Cook Potatoes

    In a large skillet, heat a tablespoon of oil over medium heat. Add diced potatoes and cook until golden and tender, about 10-12 minutes, stirring occasionally.

    Add Vegetables

    Add chopped onion, bell pepper, and mushrooms to the skillet, cooking for an additional 5-7 minutes until softened.

    Scramble Eggs

    In a bowl, whisk the eggs until well beaten. Pour the eggs into the skillet with the cooked vegetables and ham.

    Add Cheese

    Cook, stirring gently, until the eggs are just set. Add the cheddar cheese and stir until melted and combined.

Prepare Biscuit

    Make Biscuit Dough

    In a bowl, mix the biscuit mix with milk and melted butter until just combined. Do not overmix.

    Spoon the dough onto a baking sheet and bake at 400°F (200°C) for about 12-15 minutes or until golden brown.
