Prepare Ingredients

Make Gravy

Make Roux
Stir in the flour and cook for 1-2 minutes until well combined and golden.

Add Milk and Season
Gradually whisk in the milk, stirring constantly until the mixture thickens. Season with salt and black pepper.

Keep Gravy Warm
Reduce heat to low to keep the gravy warm while you prepare the scramble.
Cook Scramble

Cook Potatoes
In a large skillet, heat a tablespoon of oil over medium heat. Add diced potatoes and cook until golden and tender, about 10-12 minutes, stirring occasionally.

Add Cheese
Cook, stirring gently, until the eggs are just set. Add the cheddar cheese and stir until melted and combined.
Prepare Biscuit

Bake Biscuits
Spoon the dough onto a baking sheet and bake at 400°F (200°C) for about 12-15 minutes or until golden brown.
Serve
