Wash and cube the red skin potatoes. Boil in salted water until tender (about 10-15 minutes). Drain and set aside.

In a large skillet, cook the diced ham, bacon, and sausage over medium heat until browned and cooked through. Remove from skillet and set aside.

Making Sausage Gravy

Cook the Sausage
In a skillet, cook the ground sausage over medium heat until browned. Drain excess fat.

Make the Roux
Sprinkle flour over the cooked sausage and stir well to combine. Cook for an additional minute.

Add Milk
Slowly whisk in the milk, ensuring there are no lumps. Cook until the gravy thickens, about 5-7 minutes. Season with salt and black pepper.
Making Buttered Biscuits

Prepare the Biscuit Dough
In a large bowl, combine the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until it resembles coarse crumbs.

Add Milk
Gradually stir in the milk until the dough comes together. Do not overmix.

Bake the Biscuits
Preheat the oven to 425°F (220°C). Roll out the dough on a floured surface and cut out biscuits. Place on a baking sheet and bake for 12-15 minutes until golden brown.
