Preparing the Bowl

    Wash and cube the red skin potatoes. Boil in salted water until tender (about 10-15 minutes). Drain and set aside.

    In a large skillet, cook the diced ham, bacon, and sausage over medium heat until browned and cooked through. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the diced bell peppers and onion. Sauté over medium heat until soft (about 5-7 minutes).

    Combine Ingredients

    Add the cooked potatoes and meats back into the skillet with the sautéed vegetables. Stir to combine and heat through.

    Cook Eggs

    In a separate pan, cook the eggs to your liking (sunny side up, over easy, etc.). Set aside.

Making Sausage Gravy

    Cook the Sausage

    In a skillet, cook the ground sausage over medium heat until browned. Drain excess fat.

    Sprinkle flour over the cooked sausage and stir well to combine. Cook for an additional minute.

    Slowly whisk in the milk, ensuring there are no lumps. Cook until the gravy thickens, about 5-7 minutes. Season with salt and black pepper.

Making Buttered Biscuits

    Prepare the Biscuit Dough

    In a large bowl, combine the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until it resembles coarse crumbs.
