    Chill the Champagne

    Place the bottle of Champagne in the refrigerator for at least 2 hours before serving to ensure it is well chilled.

    Prepare the Orange Juice

    If using fresh oranges, juice enough oranges to yield 2 cups of orange juice. Strain to remove pulp if desired.

    Make Lavender Simple Syrup (if not using store-bought)

    In a small saucepan, combine 1 cup of water, 1 cup of granulated sugar, and 2 tablespoons of dried culinary lavender. Bring to a simmer over medium heat, stirring until sugar dissolves. Remove from heat and let steep for 15 minutes. Strain to remove lavender and let cool.

    Mix the Mimosa

    In a champagne flute, pour 1 part of orange juice or lavender simple syrup to 3 parts Champagne. For example, if using 1/2 cup of orange juice, add 1 1/2 cups of Champagne.

    Add a sprig of lavender or an orange slice to the rim of the glass for a decorative touch.

    Serve the mimosa immediately while the Champagne is still bubbly. Enjoy!
