Prepare the Shrimp
Marinate the shrimp in Cajun seasoning for at least 30 minutes before cooking.

Sauté Vegetables
In a large skillet over medium heat, add a splash of oil. Sauté diced yellow onion and red bell pepper until softened, about 5 minutes. Add baby spinach and cook until wilted.

Scramble the Eggs
In a bowl, whisk together eggs and season with salt. Pour the eggs into the skillet with the vegetables and cook, stirring gently until they are just set. Add cream cheese and crumbled bacon, mixing until creamy.

Cook the Shrimp
In another pan, sauté the marinated shrimp over medium heat for about 3-4 minutes or until they are pink and opaque.

Assemble the Dish
Serve the scrambled eggs topped with sautéed shrimp and roasted tomatoes.

Make the Hollandaise
In a medium bowl, whisk the egg yolks and lemon juice until combined. Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Stir in Cajun seasoning and salt to taste.

Warm the Biscuits
Warm the biscuits in the oven according to package instructions or until golden brown.

Spread butter on the warm biscuits before serving.
