Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the fresh blueberries.

Cook Pancakes
Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
Blueberry Compote

Combine Ingredients
In a saucepan, combine the 2 cups of fresh blueberries, sugar, lemon juice, and water.

Cook Compote
Bring the mixture to a boil over medium heat, then reduce to a simmer. Cook for about 10-15 minutes until the blueberries burst and the mixture thickens slightly.

Cool Compote
Remove from heat and let it cool slightly before serving.

Preheat Oven
Preheat your oven to 350°F (175°C).

In a large bowl, combine rolled oats, honey, melted coconut oil, nuts, and salt. Stir until all ingredients are coated.

Spread the mixture evenly on a baking sheet lined with parchment paper. Bake for 20-25 minutes, stirring halfway through, until golden brown.

In a mixing bowl, beat heavy cream with powdered sugar until soft peaks form.
