Method

Biscuit Beignets Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine all-purpose flour, baking powder, granulated sugar, and salt. Whisk together until well combined.

    Add the unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

    Gradually pour in the milk, stirring until a soft dough forms. Do not overmix.

    Shape Beignets

    Turn the dough onto a floured surface and gently knead it a few times. Roll the dough to about 1/2 inch thickness and cut into squares or circles.

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

    In a medium saucepan, whisk together eggs, granulated sugar, and fresh lemon juice.

    Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 8-10 minutes.

Raspberry Melba
