For the Bacon Jam

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels, reserving 2 tablespoons of bacon grease.

Make the Jam
Chop the cooked bacon and add it back to the skillet with the onions. Stir in the brown sugar, apple cider vinegar, black pepper, and red pepper flakes. Simmer for about 20 minutes, stirring occasionally until thickened. Let cool before serving.

Season the Shrimp
In a bowl, toss the shrimp with Cajun seasoning until well-coated.

Cook the Shrimp
In a skillet over medium-high heat, add a little oil and cook the seasoned shrimp for about 2-3 minutes on each side until they are pink and opaque.

Make the Biscuit Dough
Preheat the oven to 425°F (220°C). In a bowl, mix together flour, baking powder, and salt. Cut in the stick of cold butter until the mixture resembles coarse crumbs. Stir in milk until just combined.

Turn the dough onto a floured surface and knead gently. Roll out to about 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.
