For the Chicken Wrap

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. In a skillet over medium heat, cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from heat and let rest for a few minutes before slicing into strips.

    Cook the Bacon

    In the same skillet, cook the bacon until crispy. Remove and drain on paper towels.

    Assemble the Wrap

    Lay a tortilla flat and spread a generous layer of pimento cheese. Add a handful of lettuce, sliced tomato, chicken strips, and 2-3 pieces of bacon. Drizzle with bacon jam before wrapping tightly.

For the Zucchini Pickles

    Prepare the Pickles

    In a bowl, combine the sliced zucchini, apple cider vinegar, sugar, salt, mustard seeds, and dill. Mix well and let sit for at least 30 minutes to allow the flavors to meld.

For the Bacon Jam

    Cook the Bacon and Onions

    In a saucepan over medium heat, cook the bacon until crispy. Remove and drain, reserving the grease. In the same pan, add chopped onions and cook until translucent.

    Make the Jam

    Add the cooked bacon back to the pan along with brown sugar, apple cider vinegar, and black pepper. Simmer on low heat for about 30 minutes until thickened. Stir occasionally.

For Serving

    Serve the Wrap

    Serve the chicken wrap with a side of zucchini pickles and a few chocolate chip cookies for dessert.
