    Prepare the Avocado Spread

    In a bowl, mash the ripe avocado with a fork. Add lemon juice, salt, and black pepper, and mix until smooth and creamy. Set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Transfer the bacon to a paper towel-lined plate to drain excess grease.

    Baste the Eggs

    In the same skillet, crack the eggs and cook them sunny-side up. Cover the skillet with a lid to baste the eggs until the whites are set but the yolks are still runny, about 3-4 minutes.

    Make the Hollandaise Sauce

    Melt the unsalted butter in a saucepan over low heat. In a separate bowl, whisk the egg yolks, lemon juice, and salt until pale and thick. Gradually add the melted butter, whisking constantly until the sauce is thick and creamy. Add cayenne pepper for a hint of spice.

    On a plate, spread a generous layer of avocado spread. Top with crispy bacon slices and the basted eggs. Drizzle with hollandaise sauce, and garnish with diced tomatoes and fresh basil leaves. Serve alongside mixed greens.
