For the Biscuit

Prepare the Biscuit

    Mix Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk until well mixed.

    Cut in Butter

    Add the cold butter to the dry ingredients. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

    Add Milk

    Gradually pour in the milk and stir until just combined. Do not overmix.

    Shape and Bake

    Preheat the oven to 220°C (425°F). Turn the dough out onto a floured surface, gently pat into a 1-inch thick round. Cut into rounds or wedges and place on a baking sheet. Bake for 12-15 minutes until golden brown.

Prepare the Scramble

    Cook the Sausage

    In a skillet over medium heat, add the sausage. Cook until browned and cooked through, breaking it up with a spatula as it cooks. Remove it from the skillet and set aside.

    Sauté Veggies

    In the same skillet, add diced onion and bell peppers. Sauté until soft and translucent, about 5-7 minutes.

    Scramble the Eggs

    In a bowl, whisk together the eggs. Pour the eggs into the skillet with the veggies. Stir gently and cook until the eggs are just set.

    Add Sausage and Cheese

    Add the cooked sausage and cheddar cheese to the scrambled eggs. Stir until the cheese is melted and everything is well mixed.

Assemble the Dish

    Plate the Scramble

    Spoon the egg mixture onto plates.

    Add Toppings

    Top each serving with salsa verde, a dollop of sour cream, sliced avocado, and sprinkle with fresh cilantro.
