Preparing the Avocado Spread

    Mash the Avocado

    Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Add the lemon juice and salt. Mash the avocado with a fork until you reach a creamy consistency. Set aside.

Cooking the Eggs

    Fry the Eggs

    In a non-stick skillet over medium heat, add a small amount of oil or butter. Crack the eggs into the skillet, being careful not to break the yolks. Cook for about 2-3 minutes, until the whites are set but the yolks are still runny. Season with fresh ground pepper.

Toasting the Bread and Melting the Cheese

    Toast the Sourdough

    While the eggs are cooking, toast the two slices of sourdough bread until golden brown. Once toasted, place a slice of Swiss cheese on each piece of bread and return to the toaster or place under the broiler for an additional 1-2 minutes until the cheese is melted.
