Prepare the Pasta
Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until lightly golden. Gradually whisk in milk, cooking until thickened. Add cream cheese, cheddar cheese, monterey jack cheese, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir until the cheeses are melted and the sauce is smooth.

In a large mixing bowl, combine the cooked macaroni, smoked pulled pork, and cheese sauce. Mix until well combined.

Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased baking dish. Top with bread crumbs and a sprinkle of fresh parsley. Bake for 25-30 minutes or until the top is golden and bubbly.
