Crab Cakes Preparation
Mix the Ingredients
In a large bowl, combine the fresh lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, finely chopped green onions, beaten egg, salt, and black pepper. Gently fold the ingredients together until well mixed.
Slowly add the bread crumbs to the mixture, folding them in gently until just combined. Be careful not to break up the crab meat too much.
Form the Cakes
Using your hands, form the mixture into patties (about 3 inches in diameter). You should be able to make about 8 crab cakes. Place the formed cakes on a baking sheet lined with parchment paper.
Chill the Cakes
Cover the baking sheet with plastic wrap and refrigerate the crab cakes for at least 30 minutes. This helps them hold their shape while cooking.
Cook the Cakes
In a large skillet, heat olive oil over medium heat. Once hot, carefully add the crab cakes, cooking them in batches if necessary. Cook for about 4–5 minutes on each side, or until golden brown and heated through.
Spicy Aioli Preparation
Combine Ingredients
In a small bowl, whisk together the mayonnaise, Sriracha sauce, lemon juice, minced garlic, salt, and black pepper until smooth and well combined.
Adjust Seasoning
Taste the aioli and adjust the seasoning with more Sriracha, lemon juice, salt, or pepper according to your preference.
