Melt the Chocolate

Chop the bittersweet chocolate into small pieces and place in a heatproof bowl. Melt it over a double boiler or in the microwave, stirring occasionally until smooth. Allow to cool slightly.

Whip the Cream

In a large mixing bowl, pour in the heavy cream. Using an electric mixer, whip the cream on medium speed until it forms soft peaks. Be careful not to overwhip. Once done, gently fold in the vanilla extract.

Prepare the Egg Whites

In a separate clean bowl, add the egg whites and a pinch of salt. Using an electric mixer, whip the egg whites until they become frothy. Gradually add the granulated sugar while continuing to whip until stiff peaks form.

Combine Mixtures

Take the melted chocolate and gently fold it into the whipped cream until just combined. Then, carefully fold the whipped egg whites into the chocolate-cream mixture, being cautious not to deflate the mixture.

Chill the Mousse

Once combined, spoon the mousse mixture into serving dishes or cups. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to set.

Serve

After chilling, serve the chocolate mousse as is or topped with additional whipped cream or chocolate shavings if desired.
