Preheat Oven
Preheat the oven to 350°F (175°C).

Prepare Crust Mixture
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter until well mixed.

Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

Bake Crust
Bake in the preheated oven for 10 minutes, then remove and let cool.
Cheesecake Filling

Cream Cheese Mixture
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

Add Sugar
Gradually add the granulated sugar, mixing well until fully combined.

Add Vanilla and Sour Cream
Mix in the vanilla extract and sour cream until smooth.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed until just combined after each addition.

Finally, add the flour and mix until just incorporated.

Combine Filling and Crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake in the oven for 50-60 minutes, or until the center is set and slightly jiggly.

Let the cheesecake cool at room temperature for at least 1 hour, then refrigerate for at least 4 hours or overnight.

Combine Ingredients for Sauce
In a small saucepan, combine mixed berries, granulated sugar, and lemon juice.

Cook over medium heat until the berries start to break down and the sauce thickens slightly, about 10 minutes.
