Method
Prepare Pie Crust

Make the Dough
In a large bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 1 hour.

Pre-bake
Preheat the oven to 375°F (190°C). Blind bake the crust for 15 minutes. Set aside to cool.
Prepare Filling

Mix Filling
In a large bowl, combine sliced apples, sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until apples are well coated.

Fill Pie
Pour the apple filling into the cooled pie crust, spreading it evenly.
Prepare Topping

Make Crumb Topping
In a bowl, mix flour, brown sugar, oats, and melted butter until crumbly. Sprinkle over the apple filling.
Bake Pie

Bake the pie in a preheated oven at 375°F (190°C) for 45-50 minutes, until the topping is golden brown and the filling is bubbly.

Cool and Serve
Let the pie cool for at least 30 minutes before slicing. Serve warm or at room temperature.
