Mushroom Preparation

    Prepare the Mushrooms

    Clean the mushrooms by wiping them with a damp cloth. Remove any dirt and slice them into thick pieces.

    Sauté the Mushrooms

    In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms, salt, and black pepper. Cook for about 8-10 minutes, stirring occasionally, until the mushrooms are golden brown and tender. Remove from heat and set aside.

    Prepare the Spinach

    Rinse the fresh spinach under cold water and drain well.

    Sauté the Spinach

    In the same skillet, add 1 tablespoon of olive oil over medium heat. Mince the garlic cloves and add them to the skillet. Sauté for about 1 minute until fragrant, then add the spinach and salt. Cook for 2-3 minutes until the spinach is wilted and tender. Remove from heat and set aside.

    Combine Ingredients

    In a serving dish, layer the sautéed mushrooms and garlic spinach. Top with the sliced cherry tomatoes and sprinkle mozzarella cheese evenly over the top.

    Drizzle the basil oil over the assembled dish and garnish with fresh basil leaves.
