    Cook the Pasta

    In a large pot of salted boiling water, cook the orecchiette pasta according to package instructions until al dente. Drain and set aside, reserving a cup of the pasta cooking water.

    Prepare the Broccoli Rabe

    While the pasta is cooking, bring a separate pot of water to a boil. Blanch the broccoli rabe for 2-3 minutes until bright green and tender. Drain and set aside.

    Cook the Sausage

    In a large skillet, heat the extra virgin olive oil over medium heat. Add the crumbled local sausage and cook until browned and cooked through, about 5-7 minutes.

    Sauté the Vegetables

    Add the minced garlic and red chili flakes to the skillet with the sausage. Sauté for about 1-2 minutes until fragrant. Then, add the blanched broccoli rabe and toss to combine.

    Combine Everything

    Add the cooked orecchiette to the skillet, along with a splash of the reserved pasta cooking water. Toss everything together until well combined, and season with salt and black pepper to taste.

    Serve the orecchiette hot, topped with grated Parmesan cheese. Drizzle with a little more extra virgin olive oil if desired.
