Preparation of Bourbon Maple Glaze

    Make the Glaze

    In a medium saucepan, combine bourbon, maple syrup, soy sauce, minced garlic, and black pepper. Heat over medium heat, stirring occasionally, until the mixture reduces by about half and thickens slightly, about 15-20 minutes. Remove from heat and set aside.

Roasting Potatoes

    Prepare and Roast Potatoes

    Preheat the oven to 425°F (220°C). In a large bowl, toss halved baby potatoes with olive oil, garlic powder, salt, black pepper, and chopped rosemary. Spread the potatoes on a baking sheet in a single layer. Roast for 25-30 minutes or until golden and tender, flipping halfway through.

Grilling Salmon

    Grill the Salmon

    Preheat the grill to medium-high heat. Season the salmon fillets with salt and pepper. Brush the glaze generously onto the salmon. Place the salmon on the grill, skin-side down, and grill for about 6-8 minutes. Flip the salmon carefully and brush with more glaze. Grill for an additional 4-6 minutes until the salmon is cooked through and flakes easily with a fork. Remove from the grill.

Sautéed Spinach

    Sauté the Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add fresh spinach and cook, stirring frequently, until wilted, about 3-5 minutes. Season with salt and black pepper to taste.

Assembly

    Plate and Serve

    On each plate, serve a portion of roasted potatoes alongside the grilled salmon. Add a generous serving of sautéed spinach. Drizzle any remaining bourbon maple glaze over the salmon and enjoy!
