Pasta Preparation

    Cook the Gemelli Pasta

    Bring a large pot of salted water to a boil. Add the gemelli pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Sausage Preparation

    Cook the Sausage

    In a large skillet over medium heat, add the hot and sweet Italian sausages. Cook until browned and crumbled, about 8-10 minutes. Drain excess fat and set aside.

Roasting Peppers

    Roast Red Bell Peppers

    Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet and roast for about 20-25 minutes, until the skin is charred. Remove from the oven, cover with foil, and let them steam for 10 minutes. Then peel off the skins, remove the seeds, and slice the peppers.

Cream Sauce Preparation

    Make the Cream Sauce

    In the same skillet used for the sausage, add olive oil and minced garlic. Sauté over medium heat until fragrant, about 1-2 minutes. Add the heavy cream, tomato sauce, salt, and black pepper. Stir to combine and simmer for 5 minutes.

    Incorporate Cheese and Sausage

    Add the grated Parmesan cheese to the sauce, stirring until melted and smooth. Then add the cooked sausage and roasted red peppers, mixing well to combine.

    Add the drained gemelli pasta to the sauce mixture. Toss gently until the pasta is evenly coated with the sauce. Cook for an additional 2-3 minutes to heat through.
