Steak and Vegetables Preparation

    Prepare the Steak

    Season the beef steak with salt and pepper. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness. Once cooked, remove from heat and let it rest for 5 minutes before slicing thinly.

    Sauté the Vegetables

    While the steak is resting, slice the onion and bell pepper. In the same grill pan, add another tablespoon of olive oil and sauté the onion and bell pepper over medium heat until they are softened and slightly caramelized, about 5-7 minutes.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 1-2 minutes to create a roux. Gradually add the milk while whisking to prevent lumps from forming. Continue to cook until the mixture thickens, about 3-5 minutes. Lower the heat and stir in the cheddar cheese and cream cheese until melted and smooth. Season with salt and pepper to taste.

    Prepare the Aioli

    In a mixing bowl, combine the mayonnaise, minced chipotle peppers, lime juice, and garlic. Mix well until all ingredients are blended. Season with salt to taste and adjust the amount of chipotle according to your spice preference.

Assembling the Cheese Steak

    Assemble the Cheese Steak

    Slice the sub rolls or hoagie buns lengthwise but not all the way through. Place some sliced steak inside each roll, followed by the sautéed onions and bell peppers. Drizzle the house cheese sauce generously over the top and finish with a dollop of chipotle aioli.

    Serve the cheese steaks warm with additional chipotle aioli on the side for dipping if desired.
