Preparation

  1. 1

    Prepare the Bacon

In a large skillet over medium heat, cook the smoked bacon slices until crispy, about 6-8 minutes. Remove from the skillet and place on a paper towel to drain excess fat. Once cooled, chop the bacon into bite-sized pieces.

  2. 2

    Prepare the Vegetables

While the bacon is cooking, wash the iceberg lettuce thoroughly. Cut the lettuce head into quarters and carefully remove the core. Set aside. Dice the tomatoes and finely chop the red onion.

Assembly

  1. 3

    Assemble the Wedge

On a large serving plate, place one quarter of the iceberg lettuce. Top with a portion of diced tomatoes, chopped red onion, and a generous amount of chopped bacon.

  2. 4

    Add Cheese and Dressing

Sprinkle crumbled blue cheese over the top of the wedge. Drizzle blue cheese dressing generously over the wedge and toppings.
