Cajun Mayo Preparation

    Make the Cajun Mayo

    In a small bowl, combine mayonnaise, Cajun seasoning, and lemon juice. Mix well until all ingredients are thoroughly blended. Set aside.

Chicken Preparation

    Prepare the Chicken

    Preheat a grill or skillet over medium-high heat. Season the chicken breasts generously with Cajun seasoning on both sides. Grill or cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Bacon Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy, about 5-7 minutes. Remove from the skillet and place on paper towels to drain excess grease.

Assembly

    Assemble the B.L.T.

    Slice the ciabatta pieces in half and toast them lightly. Spread a generous amount of the Cajun mayo on both halves. On the bottom half, layer the lettuce, sliced tomato, grilled chicken, and crispy bacon. Top with the other half of the ciabatta. Cut in half and serve immediately.
