Prepare the Rice Balls

Cook the Rice
In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the Arborio rice, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is creamy and tender. Remove from heat and let it cool slightly.

Mix Ingredients
Once the rice is cooled, stir in the grated Parmesan cheese, salt, and black pepper. Allow the mixture to cool completely before continuing.

Stuff the Rice Balls
Take a small handful of the rice mixture and flatten it in your palm. Place a piece of fresh mozzarella in the center, then mold the rice around the cheese to form a ball. Repeat with the remaining rice mixture and mozzarella.

Make the Basil Marinara

Combine Ingredients
Add the canned crushed tomatoes, salt, black pepper, sugar, and fresh basil leaves to the saucepan. Stir to combine.

Simmer the Sauce
Allow the sauce to simmer for about 15-20 minutes, stirring occasionally, until it thickens slightly.
