Prepare the Honey Caviar
In a small bowl, combine honey, lemon juice, and Dijon mustard. Whisk in olive oil until emulsified. Season with salt and pepper to taste.

Prepare the Salad
In a large salad bowl, add the arugula. Core and slice the Pink Lady apples into thin wedges and add them to the bowl.

Add Toppings
Sprinkle the candied nuts and crumbled feta cheese over the top of the salad.
