Prepare the Roasted Strawberry Jam

Preheat your oven to 400°F (200°C). Slice the strawberries and toss them with 1/4 cup of sugar. Spread them on a baking sheet and roast in the oven for about 20-25 minutes until soft and caramelized. Allow to cool.

Make the Shortcake

In a bowl, mix the flour, baking powder, salt, and remaining sugar. Cut in the butter until the mixture resembles coarse crumbs. Add almond extract and mix in enough heavy cream to form a soft dough.

Bake the Shortcake

Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round and place on a greased baking sheet. Bake at 400°F (200°C) for 15-20 minutes until golden brown. Let it cool.

Prepare the Whipped Cream

In a chilled bowl, whip the heavy cream with powdered sugar until soft peaks form.

Assemble the Shortcake

Slice the shortcake in half, spread the roasted strawberry jam on the bottom half, add a layer of whipped cream, and then place the top half of the shortcake on. Top with more whipped cream and strawberries if desired.
