Method

For the Ribeye

    Prepare the Steak

    Season the Black Angus ribeye steaks with salt and black pepper on both sides. Drizzle with olive oil.

    Grill the Steak

    Preheat the grill to high heat. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness.

For the Au Poivre Sauce

    Make the Sauce

    In a saucepan, melt the butter over medium heat. Add minced shallots and sauté until translucent.

    Add Peppercorns and Brandy

    Stir in the crushed black peppercorns and pour in the brandy. Allow it to reduce by half.

    Finish the Sauce

    Lower the heat and add the heavy cream. Simmer for a few minutes until thickened. Season with salt to taste.

For the Roasted Fingerling & Brussel Sprout Hash

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Vegetables

    In a large bowl, combine halved fingerling potatoes, halved brussel sprouts, minced garlic, olive oil, salt, black pepper, and fresh thyme. Toss to coat.

    Roast the Vegetables

    Spread the vegetables on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden and tender.
