Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In a separate bowl, whisk together the milk, egg, melted unsalted butter, and vanilla extract until fully blended.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix; the batter should be slightly lumpy.

Cooking

  1. 4

    Preheat the Pan

Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a little butter or cooking spray.

  2. 5

    Cook the Pancakes

Using a ladle, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

  3. 6

    Flip and Finish Cooking

Carefully flip the pancakes with a spatula and cook for an additional 1-2 minutes, until golden brown and cooked through.

  4. 7

    Serve

Remove the pancakes from the skillet and keep warm. Serve with butter and maple syrup drizzled on top, to taste.
