Start by soaking the natural sausage casings in water for at least 30 minutes if using. This helps to soften them and makes them easier to handle.

In a large mixing bowl, combine the ground organic chicken, minced garlic, chopped parsley, and finely chopped pork fat (or chicken fat).

Add salt, black pepper, paprika, dried oregano, and red chili flakes to the mixture. Use your hands or a spoon to thoroughly combine all the ingredients until well incorporated.
Stuffing (if using casings)

If you are using natural sausage casings, rinse them under cold water and then gently slide the casing onto a sausage stuffer attachment.

Carefully stuff the sausage mixture into the casings, being careful not to overstuff. Tie off the ends of the casings with kitchen twine to secure them.
Cooking

Heat olive oil in a large skillet over medium heat.

Once the oil is hot, add the sausage links (either stuffed in casings or formed into patties). Cook for about 5-7 minutes on each side, or until they are golden brown and cooked through, reaching an internal temperature of 75°C (165°F).
