Preparation of the Base

    Heat the Milk and Cream

    In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until the mixture is hot but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together 4 egg yolks and 3 tablespoons of granulated sugar until the mixture is smooth and pale in color.

    Combine Mixtures

    Slowly pour the hot milk and cream mixture into the egg yolk mixture while continuously whisking to temper the yolks. This prevents the yolks from scrambling.

    Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

Flavoring the Gelato
