Tea Base

Preparing the Tea

    Boil Water

    In a large pot, bring 4 cups of water to a boil.

    Steep Tea

    Once boiling, remove from heat and add 4 black tea bags. Let steep for 15 minutes.

    Add Sugar

    Remove the tea bags, then stir in 1 cup of sugar until fully dissolved. Allow the tea to cool to room temperature.

Fermentation Process

    Combine Ingredients

    In a clean glass jar, pour the cooled tea mixture. Add 1 cup of starter tea and gently place the SCOBY on top.

    Cover Jar

    Cover the jar with a clean cloth or coffee filter, secured with a rubber band. This allows air to flow while keeping contaminants out.

    Ferment

    Place the jar in a warm, dark place (around 70-85°F or 21-29°C) for 7 to 14 days. Taste after a week and continue fermenting until desired tanginess is achieved.

Flavoring and Bottling

    Prepare Flavorings

    If desired, prepare your flavorings by chopping fresh fruit or herbs. You can use about 1 cup total.

    Bottle Kombucha

    Once fermentation is complete, remove the SCOBY and set it aside. Pour the kombucha into bottles, leaving some space at the top for carbonation.

    Add Flavorings

    Add the prepared flavorings to each bottle, then seal tightly.

    Second Fermentation

    Let the sealed bottles sit at room temperature for 3 to 7 days to carbonate. Check daily and refrigerate once desired fizziness is achieved.
