Method

Prepare Fish

    Blacken or Grill the Fish

    Season the fish fillets with your choice of spices (e.g., paprika, cayenne, garlic powder, salt, and pepper). Heat a skillet over medium-high heat with a little oil. Cook the fish for about 3-4 minutes on each side until cooked through, or grill on a preheated grill for similar timing until flaky.

Cook Rice and Beans

    Prepare Red Jasmine Rice

    In a saucepan, combine the red jasmine rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15-20 minutes until rice is tender and water is absorbed.

    Heat Black Beans

    If using canned black beans, drain and rinse them. Heat in a small pot over medium heat until warmed through, about 5 minutes.

Make Tropical Fruit Salsa

    Combine Salsa Ingredients

    In a bowl, mix together diced pineapple, mango, red onion, cilantro, and lime juice. Stir well and set aside to allow flavors to meld.

Prepare Roasted Jalapeno Cashew Crema

    Blend Cashew Crema

    Soak raw cashews in water for 2-4 hours, then drain. In a blender, combine soaked cashews, roasted jalapeno, 1/2 cup water, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning as necessary.

Assemble Tacos

    Assemble Ingredients

    Warm the corn tortillas in a dry skillet for about 30 seconds on each side. On each tortilla, layer black beans, red jasmine rice, blackened/grilled fish, cortido kraut, clover sprouts, tropical fruit salsa, and a drizzle of roasted jalapeno cashew crema. Top with taqueria pickles for added crunch.
