Preparing the Fish

Season the Fish
Coat each fish fillet with olive oil, then sprinkle Cajun seasoning evenly over both sides.

Prepare the Pickling Mixture
In a bowl, mix rice vinegar, sugar, and salt until dissolved.

Pickle the Mung Bean Sprouts
Add the mung bean sprouts to the pickling mixture and let them sit for at least 15 minutes to absorb the flavors.
Preparing the Cucumber

Slice the Cucumber
Cut the cucumber in half lengthwise and then slice into thin half-moons.

Prepare the Bowls
In each serving bowl, place a cup of cooked rice as the base.

Top the rice with the blackened or grilled fish, pickled mung bean sprouts, and seasoned cucumber slices.

Add sesame seeds, sliced green onions, and a fried egg on top of each bowl.
