Method

Brewing the Kombucha

    Prepare the Sweet Tea

    In a large pot, bring 4 cups of water to a boil. Remove from heat and add the granulated sugar, stirring until fully dissolved. Add the black tea bags and let steep for 10-15 minutes.

    Cool the Tea

    Once the tea has steeped, remove the tea bags and let the mixture cool to room temperature. This is crucial to avoid killing the SCOBY.

    Combine Ingredients

    In a large glass or ceramic jar, add the cooled sweet tea, 1 cup of starter tea, and gently place the SCOBY on top.

    Ferment

    Cover the jar with a clean cloth or coffee filter secured with a rubber band. Place it in a warm, dark place (around 68-85°F / 20-29°C) for 7-14 days. Taste periodically until it reaches your desired level of fermentation.

Flavoring and Second Fermentation

    Add Flavorings (Optional)

    If you'd like to flavor your kombucha, you can add fresh ginger, fruit, or herbs to the jar after the first fermentation. Pour the kombucha into smaller bottles, leaving some space at the top.

    Second Fermentation

    Seal the bottles tightly and let them sit at room temperature for another 3-7 days. This will carbonate the kombucha.

    Refrigerate

    Once carbonated, refrigerate the bottles to stop the fermentation process. Your draft kombucha is now ready to serve on tap or chilled in bottles!
