Omelet Preparation

Prepare the Vegetables
Heat 1 tablespoon of olive oil or butter in a skillet over medium heat. Add the diced red bell pepper and onion, sautéing for about 5 minutes or until they are softened and slightly caramelized.

Cook the Ham or Tempeh
Add the diced Black Forest ham or tempeh to the skillet with the sautéed vegetables. Cook for an additional 2-3 minutes, stirring occasionally until heated through.

Add Cheese
Once the omelet is mostly set but still slightly runny on top, sprinkle the shredded Swiss cheese or cheddar (or cultured cashew cheese) over one half of the omelet. Carefully fold the other half over the cheese.

Finish Cooking
Let the omelet cook for another 1-2 minutes until the cheese is melted and the omelet is cooked through. Slide the omelet onto a plate.

Serve the Omelet
Serve the omelet hot, topped with fire-roasted salsa. Pair with your choice of red rice, purple sweet potato home fries, black beans, or sourdough toast.
