Salad Preparation

Prepare the Romaine Lettuce
Wash the romaine lettuce thoroughly under cold water. Pat dry with a paper towel and chop it into bite-sized pieces.

Grate the Parmesan Cheese
Using a box grater or a food processor, grate the parmesan cheese until you have about 0.5 cup.
Dressing Preparation

Make the Dressing
In a small bowl, mash the garlic clove with a fork. Add the anchovy paste, Dijon mustard, Worcestershire sauce, and lemon juice. Whisk until combined.

Emulsify the Dressing
Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified. Season with salt and black pepper to taste.

Combine the Salad
In a large salad bowl, add the chopped romaine lettuce, croutons, and grated parmesan cheese.

Dress the Salad
Pour the prepared dressing over the salad. Toss gently to coat all ingredients evenly.
