Cover Jar
Cover the jar with a clean cloth or coffee filter secured with a rubber band to allow airflow while keeping contaminants out.

Place the jar in a warm, dark place (around 70-85°F or 21-29°C) for 7-14 days, depending on your taste preference. Taste the kombucha starting at day 7.

Prepare Bottles
After fermentation, gather clean bottles with tight-fitting lids for storage.

If desired, add grated ginger and chopped fruit to the bottom of each bottle.

Bottle Kombucha
Using a funnel, pour the kombucha into the bottles, leaving about 1 inch of headspace at the top.

Seal and Ferment Again
Seal the bottles tightly and leave them at room temperature for 3-7 days for a second fermentation, which will carbonate the kombucha.

After the second fermentation, refrigerate the bottles. The kombucha is now ready to drink!
