Booch Preparation

    Prepare the Base

    In a large pot, bring 4 cups of water to a boil. Remove from heat.

    Add Sugar and Tea

    Stir in 1 cup of sugar until dissolved. Add 4 tea bags and steep for 15 minutes.

    Cool and Combine

    Remove tea bags and let the mixture cool to room temperature. Once cooled, pour into a large glass jar.

    Add SCOBY and Starter Tea

    Add 1 cup of starter tea and the SCOBY into the jar. Cover with a cloth and secure with a rubber band.

    Fermentation

    Allow to ferment in a warm, dark place for 7-14 days, tasting periodically until desired flavor is reached.

    Stir in 1 cup of honey until dissolved. Add 4 green tea bags and steep for 15 minutes.

Flavoring the Booch and Jun

    Prepare Flavorings

    In a separate bowl, combine 2 tablespoons of grated ginger, 3 tablespoons of lemon juice, and 1 cup of mixed berries.

    Combine with Fermented Bases

    Once the Booch and Jun have fermented to your liking, strain them into separate bottles, leaving some space at the top.

    Add Flavorings

    Divide the prepared flavorings equally between the Booch and Jun bottles. Seal the bottles tightly.

    Second Fermentation

    Let the bottles sit at room temperature for another 3-7 days for second fermentation. Refrigerate when bubbly.
