Cooking Quinoa

Rinse and Cook Quinoa
Rinse 1 cup of quinoa under cold water to remove bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Chop and Sauté Vegetables
While the quinoa is cooking, prepare the vegetables. Dice 1 medium bell pepper, 1 medium zucchini, and 1 medium carrot. Mince 2 cloves of garlic. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the diced vegetables and sauté for about 5-7 minutes until they are tender. Stir in 2 cups of fresh spinach and cook until wilted.

Mix the Bowl
Once the quinoa and vegetables are cooked, combine them in a large mixing bowl. Rinse and drain 1 can of chickpeas and add them to the bowl. Sprinkle 1 teaspoon of cumin, 1 teaspoon of salt, and 1 teaspoon of black pepper into the mix. Stir well to combine all ingredients thoroughly.

Garnish and Serve
Serve the booch bowl in individual bowls. Squeeze the juice of 1 medium lemon over the top and garnish with 2 tablespoons of chopped fresh parsley. Enjoy your healthy booch bowl!
